Ingredients
  

  • 100 g unsalted butter softened
  • 80 –100g sugar
  • 2 eggs
  • 130 g all-purpose flour
  • 30 g cocoa powder
  • 1 tsp baking powder
  • 100 ml heavy cream 10–20% fat
  • Topping:
  • 200 –250ml whipped cream
  • 200 g strawberries sliced
  • 100 g blueberries

Method
 

  1. Preheat oven to 340°F (170°C). Line a rectangular baking pan with parchment.
  2. Cream the butter and sugar together until fluffy.
  3. Beat in eggs, one at a time.
  4. In a separate bowl, whisk flour, cocoa, and baking powder.
  5. Alternate adding dry mixture and cream to wet ingredients, mixing until smooth.
  6. Pour batter into the prepared pan. Bake 15-20 minutes or until a toothpick comes out clean.
  7. Cool completely.
  8. Spread whipped cream over the cooled cake.
  9. Arrange blueberries in the top-left corner to represent the stars.
  10. Place sliced strawberries in horizontal rows. Pipe whipped cream between rows for stripes.

Notes

  • Suitable for toddlers if berries are sliced small and no allergies are present.
  • For a lighter version, try using Greek yogurt in place of cream.
  • Store decorated cake in the fridge for up to 2 days.
