Ingredients
  

  • Salad Base:
  • ½ pound pasta elbow, rotini, or shells
  • ¾ cup cucumber diced
  • ¾ cup sharp cheddar cubed
  • ¼ cup black olives sliced
  • Dressing:
  • ½ cup mayonnaise
  • 1 tbsp pickle brine
  • 1 tbsp milk
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp dried dill
  • Salt & pepper to taste

Method
 

  1. Cook pasta: Boil pasta in salted water until al dente. Drain and rinse under cold water.
  2. Mix dressing: In a medium bowl, whisk together mayo, pickle brine, milk, garlic powder, onion powder, dill, salt, and pepper.
  3. Assemble salad: In a large bowl, combine pasta, cucumber, cheddar, and olives. Pour dressing over top.
  4. Toss & chill: Gently fold until evenly coated. Chill in the fridge for at least 30 minutes before serving.

Notes

  • For toddlers or infants: This salad can work for toddlers if pasta is cut into very small pieces and cheese cubes are softened. Skip the olives if choking is a concern.
  • Add-ins: Chopped pickles, red onion, or even shredded chicken make it heartier.
  • Storage: Keep refrigerated in an airtight container for up to 3 days.
