Ingredients
  

  • Dressing:
  • ¾ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 garlic clove minced
  • 2 tsp Dijon mustard
  • Salt to taste
  • ¼ cup grated Parmesan
  • Salad:
  • 4 cups chopped romaine lettuce
  • 4 cups shredded iceberg lettuce
  • 12 oz canned chickpeas drained
  • 4 oz Italian salami sliced
  • 2 cups shredded mozzarella

Method
 

  1. Make the Dressing: In a medium bowl, whisk together olive oil, vinegar, garlic, mustard, salt, and Parmesan until smooth and emulsified.
  2. Assemble the Salad: In a large mixing bowl, combine romaine, iceberg, chickpeas, salami, and mozzarella.
  3. Toss Together: Add the dressing and toss well until everything is evenly coated.
  4. Serve: Transfer to a serving platter and top with extra Parmesan, if desired.

Notes

  • Chop everything small for the classic La Scala “every bite” effect.
  • Store leftover dressing in the fridge for up to 4 days.
  • For toddlers: Serve chickpeas and cheese separately; omit or finely dice salami.
