Dip strawberries: Holding by the green tops, dip each strawberry into the white chocolate, covering about ¾ of the fruit. Place on a parchment-lined baking sheet.
Let set: Allow strawberries to cool at room temp or refrigerate for 5–10 minutes until the chocolate firms up.
Melt candy melts: In two separate bowls, melt red and blue candy melts the same way—short bursts in the microwave, stirring in between.
Drizzle and decorate: Drizzle red and blue melts over the white chocolate-dipped strawberries using a spoon or piping bag. Add sprinkles while the drizzle is still wet.
Final chill: Let strawberries set completely at room temp or chill briefly until firm.
